
A delightful dessert that combines the sweetness of apples and pears with the nutty crunch of hemp hearts. This crumble is perfect for a cozy evening treat.
Ingredients:
- 3 cups stewed apples & pears (= 3 medium sized granny smith apples & 2 medium sized pears. Thinly sliced to stew)
- 1 tablespoon brown sugar
- 1 tablespoon muscovado sugar
- 1 teaspoon finely grated lemon or orange peel (optional)
- 1 cup rolled oats
- ½ cup almond flour or finely ground almonds
- ½ cup Hemp & Co Hemp Hearts
- 1/3 cup brown sugar
- 1/3 cup whole wheat flour
- 6 tablespoons butter, melted or coconut oil
- 3 tablespoons Original Hemp Seed Oil or extra virgin olive oil
Preparation:
- In a large mixing bowl combine the apples, pears, muscovado & brown sugar, and lemon or orange zest. Toss well so all of the fruit is covered in sugar.
- Spread the fruit into an even layer on the bottom of a 9-inch (20cm) ceramic or glass baking dish. I used a round dish.
- In a medium mixing bowl combine rolled oats, almond flour, brown sugar, whole wheat flour, melted coconut or butter, and olive or hempseed oil. The mixture should be crumbly. Use a large spoon to sprinkle this mixture over the fruit.
- Bake at 175 degrees Centigrade for 25 to 30 minutes, until the topping is browned and the fruit is soft. Serve warm with a small scoop of vanilla yogurt or ice cream.
Note:
I stewed the pears in their own juice on a very low heat first. With a slotted spoon I removed the stewed pears leaving their juice for the apples to stew in. This produced a moist but not overly liquidy stewed fruit mixture, perfect for the crumble.
