Roast Tahini Vegetables
A delicious way to enjoy a variety of vegetables. Use whatever vegetables you have in your vege fridge drawer.
Ingredients
1 broccoli
1 cup cauliflower, chopped
1 cup celery
2 tablespoons of Tahini
2 tablespoons of Hemp & Co Original, Garlic or Chilli hempseed oil
1 teaspoon sesame oil
2 tablespoons lemon juice
1 tablespoon of fresh grated ginger
1 garlic clove, chopped
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon hemp seeds
Method
Prepare oven to 190 deg Celsius. Line a baking dish.
Chop all vegetables into similar sized pieces and put into a large mixing bowl.
Mix the tahini, hempseed oil, sesame oil, lemon juice, grated ginger, chopped garlic, hemp seeds, salt and pepper together until well mixed.
Add to bowl and toss until vegetables are well coated. Transfer to oven tray.
Pop in oven for 15 minutes, checking and tossing until browned and cooked.
Eat immediately or let cool and store in plastic container in the fridge.
