These bars are an excellent on-the-go snack, combining hemp hearts with peanut butter, and a touch of honey or maple syrup. They’re perfect for an energizing boost during busy winter days.
Ingredients
- ½ cup Hemp & Co hemp hearts
- ¾ cup wholemeal flour
- 1 cup almond flour
- ¾ cup peanut butter
- 2 tbsp butter or coconut oil (for base)
- 3 tbsp honey
- 1 tbsp butter or coconut oil (for topping)
- ¾ cup dark chocolate chips
Directions
- In a large bowl, combine hemp hearts, wholemeal flour, and almond flour.
- In a small pot over low heat, melt 2 tbsp coconut oil, then stir in peanut butter and honey until smooth.
- Mix wet ingredients into dry until a crumbly dough forms.
- Press firmly into an 8”x8” parchment-lined pan to form the base.
- In a small pot or double boiler, melt 1 tbsp coconut oil with chocolate chips over low heat, stirring until smooth.
- Pour chocolate over the base and spread evenly. Freeze for 45-60 minutes until set.
- Let sit at room temperature for 10 minutes before cutting into 16 squares.
